Citric Acid

Citric acid, which is widely used, is a white weak organic acid in powder form.
It contains carbon, hydrogen and oxygen atoms.
Its formula is C6H8O7.
Citric acid is naturally found in many vegetables and fruits.
It is mostly found in lemon and other citrus fruits.
Although it is usually found naturally in fruits, it is difficult to produce citric acid from fruits and vegetables, so today citric acid is produced from sugar.
Technical (specific) properties of citric acid are given in the table below.

Areas of Use

Food Industry
In Beverages
The most important use of citric acid is undoubtedly observed in the beverage industry.
In thirst-quenching beverages, 70%-80% of citric acid produced due to its taste and preservative properties is used in the beverage industry. It is widely used in beverages due to its acidity balancing and antioxidant properties.
Jam and Similar Foods:
Citric acid is used in the food sector, especially as a preservative (E 330), in balancing the PH of sugary foods such as jam and preventing spoilage.
In Confectionery:
Citric acid is added to sugar, which can increase acidity and prevent oxidation of various components and sucrose crystallization.
Sour confectionery contains 2% citric acid.
Frozen Foods:
Citric acid can be used alone or in combination with ascorbic acid to extend the shelf life of frozen foods and prevent spoilage.
In Pharmaceutical Industry
In the pharmaceutical industry, citric acid is used in effervescent tablets and syrups.

In industry

Purification: Citric acid has the ability to remove oxides deposited on the surface of iron and other metals. Being a weak acid, it can clean without causing much damage to the metal.
Citric acid is used in pre-washing and cleaning processes in boilers, heating boilers, superheater pipes and reactors and is widely used in cleaning stainless steel equipment. Citric acid is also used in water softening.
In detergents and sprays:
Citric acid is used in sprays and cleaning products because of its pleasant odor and cleaning properties.
